You Say Aubergine, I Say Eggplant


Either way you say it, I still don't know what to do with it. Whether white or purple, it is so beautiful and I am always tempted to buy it.

I like them best in lasagne. Then, as sauce over pasta. Fried slices of eggplant are also yummy, though they are sponges for oil...

Ah ! Des aubergines ! Make scrumptious Moussaka! Or simply bake with olive oil and garlic! Or marinate them in olive oil! Yes, why not in Lasagne! Or you might want to stuff them with tomatoes, garlic and meat! Cook them in a "ratatouille" with tomatoes and zucchini! Roll sardines in them once you've marinated them and then grill them... Crickey, I could go on and on... Let me know how you're doing!

I've got a great recipe for you.
Besides eggplant is one of the 3 vegetables that have actually survived in our garden this summer. So with a vegetble like that you can't go wrong!

Ciel, my mouth is watering with all the possibilities. I will have to get out my recipe books and force myself to cook. It sounds as though lasagne is quite popular. My vegetarian daughter will be moving home for a few months so this could be something to make for her welcome home dinner.
I think I'll skip the sardines though.

Not for me, though. No eggplant shall pass my lips.

That's a solemn vow I made years ago when I first tasted it.
